Lahmacun (Arabic: لحم بعجين additionally lahmajun and different spellings) is a spherical, thin piece of dough topped with minced meat – most typically pork or lamb, minced vegetables and herbs consisting of onions, garlic, tomatoes, red peppers, parsley, and spices which include chili pepper, and cinnamon.

Unlike pizza, lahmacun is not usually prepared with cheese and the crust is thinner.
Lahmacun is a popular dish in Armenia, in which it is also referred to as lamadjo in Turkey (lahmacun), Lebanon and Syria (lahm bi ‘ajin) and in Armenian, Turkish, and Arab groups global.
Here is the recipe for this Turkish specialty:
Ingredients for the filling:
- 200 g ground beef
- 1 onion
- 3 cloves of garlic
- 1 bunch of parsley
- 1 fresh red pepper
- 4 tablespoons mashed tomatoes
- 1 teaspoon ground chili
- 1 teaspoon paprika
- Salt, pepper
- Dough ingredients:
- 300 g of flour
- 15 g of fresh yeast
- 250 ml of warm water
- 1 teaspoon of salt
- a spoonful of sugar
- 1 tablespoon olive oil
- 3 tablespoons of milk
Preparation:
Put all the filling ingredients except the meat in a mincer and chop finely. Just be careful not to turn everything into a paste, the ingredients must be finely chopped, not mushy.
Serve everything in a bowl, add the meat and knead everything well for about three minutes until everything is nicely combined. If necessary, season to your liking.
Now start preparing the dough. Put sugar in lukewarm milk, then crumble the yeast into it, mix well and sprinkle with flour.
Pour the flour into the bowl in which you will knead the dough. When the yeast rises, put it in a bowl and combine with the flour. Add salt and water, then knead a smooth dough.
Shape it into a ball, coat with oil, return to the bowl, cover with plastic wrap and let it rise for about an hour.
When the dough rises, divide it into five equal parts and form smaller balls. Roll out the ball as thinly as possible on a floured surface so that the dough does not stick.
Put two spoons of filling on it and then spread the lightly over the whole dough with your fingers and press it a little.
Finish the other balls in the same way and place them in a baking tray.
Bake for about 10 minutes at 220 degrees Celsius.
Before serving, you can sprinkle with lemon juice, add a little chopped parsley and onion, and then roll.
