For this colorful pie, we need:
- 1 leek – not very large
- 1/2 red bell pepper
- 100 g of spinach
- 3 potatoes, about 600 gr
- 3 carrots
- 4 eggs
- 4 tablespoons oil
- 4 tablespoons milk
- 4 tablespoons flour
- 1 baking powder
- 1 teaspoon salt, pepper to taste
More (for sprinkling):
- 50 – 100 g of hard cheese – we used gouda
Chop the leek into rings, the bell peppers into cubes, and chop the spinach.
Add grated potatoes and carrots and mix everything.
Turn the oven to 180 degrees celsius.
Beat eggs with salt and oil. Add milk, flour, pepper and baking powder and combine everything.
Shake the vegetables into this mass and mix well.
Put baking paper in a large baking tray and shake the whole mixture.
Flatten and bake for 25 minutes.
After 25 minutes, sprinkle with grated cheese and if you like some seeds.
Bake for another 25 minutes.
