A salad with new potatoes, peas and spinach can replace a meal and give you enough energy for the day, in addition it is delicious and rich in vitamins and minerals. Meat is not needed.
The amount of salad is enough for 4 -6 people.
• 900 g – 1 kg of young potatoes
• 300 g of frozen peas
• 1 bunch of radishes
• 70 g baby spinach
• 3 pieces of young onion
• 4 tablespoons olive oil
• 3 tablespoons lemon juice
• 1 teaspoon mustard
• with and pepper, to taste
Turn on the oven to heat to 220 ° C. Line a large baking tray with baking paper.
Wash the potatoes well, then cut the larger pieces into halves or quarters, leaving the smaller ones whole. Arrange on a baking sheet, to be in one row, sprinkle with olive oil and a pinch of salt. Bake for about 30-40 minutes or until golden brown. Remove from oven and allow to cool.
Save the peas by simmering them briefly. Sleep in a bowl with cold water to keep the peas green. Cut the radishes into halves or quarters if they are larger. Cut the onion into rings.
Mix all the dressing ingredients, add salt and pepper to taste, then try and adjust the taste if necessary.
Put chilled potatoes in a large bowl, add peas, radishes, spinach, onions and mix everything lightly. Pour over the dressing and stir gently again. Try and adjust the spices to taste.
