2 young zucchini
flour and breadcrumbs
Zucchini cut into rings and salt. Beat the eggs well with a fork.
Roll the zucchini first in the flour, then in the eggs and finally in the breadcrumbs and arrange them in a baking tray.
Put a drop of two oils over each zucchini and bake them in the oven at 170 degrees Celsius.
When one side is baked and is finely golden browned turn them to the other side.
Serve immediately, garnished with parsley, if desired.
